Santorini Tomatokeftedes (Greek Tomato Fritters)

Santorini's most famous bite: crispy tomato fritters from the cliffs of the caldera.

Serves: Makes about 12 fritters Time: About 25 minutes

Ingredients

  • · 1 lb ripe tomatoes, finely chopped
  • · 1 small red onion, finely chopped
  • · 2 tbsp fresh mint, chopped
  • · 2 tbsp fresh parsley, chopped
  • · Salt and pepper
  • · About 1 cup flour, plus 1 tsp baking powder
  • · Olive oil, for frying

Method

  1. 1 Mix the tomatoes, onion, herbs, and salt. Let sit 10 minutes.
  2. 2 Squeeze out the excess liquid.
  3. 3 Stir in the flour and baking powder to a thick batter.
  4. 4 Spoon into hot olive oil and fry until golden, about 2 to 3 minutes a side.
  5. 5 Drain, then serve with tzatziki.
