Cambodian Fish Amok (Coconut Curry)
Cambodia's national dish: a silky coconut fish curry, the 20-minute home version.

Ingredients
- · 1 lb white fish (tilapia or cod), cubed
- · 1 can coconut milk
- · 2 to 3 tbsp red curry paste
- · 1 egg
- · 1 tbsp fish sauce
- · 1 tsp sugar
- · Lime zest or kaffir lime leaves
- · Coconut cream and Thai basil, to top
Method
- 1 Whisk the coconut milk, curry paste, egg, fish sauce, sugar, and lime into a smooth sauce.
- 2 Fold in the cubed fish.
- 3 Steam in a bowl for 15 to 20 minutes.
- 4 Top with coconut cream and Thai basil.
Traditional amok is steamed over charcoal in a banana leaf. This is the weeknight-friendly version.
